MEET THE PRODUCER! Sebastián Ramírez is a fourth-generation coffee producer who began his career as a traditional grower more than twelve years ago. Before long, he was experimenting with the finer points of fermentation, and today he’s known as a master of techniques such as co-fermentation and carbonic maceration. His mission is to make coffee both accessible and exciting, a vision he brings to life through his processing innovations and his mentorship in the Young Producer Program. Both Sebastián and his coffees can be summed up as “anything but ordinary,” and this co-ferment is one of our favorite examples of that spirit.
About El Placer & Macarena: El Placer, operated by Sebastián in Quindío, has become one of Colombia’s leading farms for experimental processing and cutting-edge co-ferments. Their meticulous approach, whether it’s extended fermentation, controlled drying, or inventive flavor pairings has earned them a devoted following among specialty roasters worldwide.
This lot comes to us through Macarena Café, a Canadian importer committed to building strong, transparent partnerships with Colombian producers. Thanks to their work, unique coffees like Several Fruits reach the market, giving roasters and drinkers a direct connection to the people and stories behind each harvest.
FERMENTATION: | Anaerobic fermentation for 72 hrs in tanks and drying in raised beds or marquesinas for 15 days. It is mixed with the red fruit caturra co-fermented (around 15-20%).
TAKE A SIP | It’s no surprise that this coffee delivers bold fruit character and funky acidity. Its sweetness is bright and confectionary, transforming those fruit notes into flavors reminiscent of strawberry, cherry, plum, tropical acidity, syrupy body.
